we use canned enchilada sauce for ease. However, do not use Hy-Vee brand enchilada sauce. Ever. Too much chili powder. We have used name brand in the past & this turned out delicious. Used Hy-Vee brand this time & it was terrible.
Add jalapeño ranch for a nice kick. Can also use 90 second rice & pre-cooked fajita chicken for a super quick one pot meal for those nights you have to have dinner in a hurry.
