These are a good start. Adjustments to consider: put black salt and turmeric in the tofu mixture instead of the veggies. Add cumin, smoked paprika, cayenne, and oregano to the veggies. Add vegan cheese or a little oil to improve texture and aid in vitamin absorption. I used firm (not silken) tofu and needed quite a bit more milk to get it to blend. It made 10 muffins, not a full dozen. I forgot to let it sit for the baking powder to work. The recipe has a lot of copy/paste and formatting errors, and what imported here is hard to follow.
