I ended up roasting a whole chicken (no oil) in the oven. Took off the skin and then shredded it. Then I diced the sweet potato up, and cooked the broccoli and other veggies & nuts, and it ended up more like a chicken bowl. Same ingredients, just reimagined. Im not a huge fan of eating roasted veggies day after day, so from a meal prep perspective, knowing I had this bowl worked a treat for me, might inspire someone else too. :)
