Absolutely awful photo, because this was SO GOOD - I'm a bit so-so with zucchini, but wow. They make an amazing pasta - I will absolutely have this on a regular rotation. Took a bit longer and a lot more oil to properly char the courgette, but when it came together it was beautiful! It was amazing vegan, but of course I added a bunch of parmesan and went back for seconds. Then remembered I should take a photo.. but it was too good.
Probably wasn't under 30 minutes because I hesitated with the charring, but probably 30-40 minutes for me.
