I used a staub braiser which may have been too small since I could only fit 2 cups of liquids in the pan without submerging the beef for a good braise. I've opted for baby Belle mushrooms for a more mild mushroom flavor for the family. The way the recipe cooks the mushrooms separately is excellent, I've adapted this to other recipes to keep a good texture on the mushrooms.
