I did not have a lemon. Used one tablespoon of lemon juice.
I only had basic Bertolli extra virgin olive oil.
Instead of lemon zest I used some ginger paste.
Added cardamom and vanilla paste.
Didn’t have Greek yogurt but had some Meyer lemon yogurt cups from Trader Joe’s.
Didn’t wait for the eggs to get to room temperature.
Cake came out perfect and moist. It was fast and easy to make this dessert. I am shocked.
I had some left over cream cheese frosting but this cake does not need it.
