I ended up using 1 cup beef broth and 1/2 cup Guinness. I did adjust the broth salt/pepper to taste and made the potatoes with more butter and added sour cream. We are picky with potatoes lol. I would recommend adjusting the beef broth a little bit at a time to make sure you dont over do it.
