In a large pot, brown the ground beef over medium heat, breaking it up with a spoon until no longer pink. Your kitchen will smell amazing at this point!
Add the chopped onions and minced garlic, cooking until softened—about 5 minutes—stirring occasionally.
Toss in the diced potatoes and sliced carrots. Give it a good stir to combine.
Pour in the chicken broth and bring to a boil over high heat. Once boiling, reduce to a simmer and cover. Let it cook for 20 minutes or until the potatoes are tender.
Stir in the cream and shredded cheddar cheese until melted and creamy, creating that luscious texture.
Season with salt, pepper, and paprika to taste.
Serve hot, garnished with additional cheese on top if desired.
