Tasty, I did cook it differently. I put the potatoes on a higher heat and cooked them for around 10 mins, then I added the onions and peppers for another 20 mins or until all done. While they were cooking I pre boiled the broccoli and carrots which I added, then I made a glaze of balsamic vinegar, soya sauce, honey and garlic then when the vegetables were cooked I added them to the glaze While the cheese was grilling. The glaze gave it a bit of sweetness, which I liked. It did make a lot. I made it for one, and there was enough for two meals for me, so I would definitely half it again
