This was such a nice dessert, I unfortunately forgot to take photos as my family and I ate the up the second they were made. I did change the Jam to a simple low sugar strawberry syrup, this made the dessert less sweet which is what my family and I prefer. I used a cooking brush to apply the syrup onto the cake layers.
simple low sugar strawberry syrup:
• ¼ cup water (60 ml)
• 2 tbsp sugar
• 3–4 fresh strawberries, hulled and thinly sliced
• Optional: ½ tsp vanilla extract
1. In a small saucepan, combine water + sugar. Heat gently on low–medium, stirring until the sugar dissolves. Do not boil.
2. Add the sliced strawberries to the warm syrup. Stir gently until syrup changes to a tint of red.
3. Remove from heat and let the mixture cool completely with the strawberries in it.
4. Optional: stir in vanilla extract after removing from heat.
5. Strain the syrup into a clean container (or leave some strawberry pieces in if you like).
6. Store in the fridge if not using immediately — use within 2–3 days.
