I only substituted the zucchini with baby carrots and also added fresh minced garlic to the chicken.
One modification I implemented was baking the sweet potatoes, carrots and chicken first for the first 10 minutes and after that I added the onions and peppers.
I baked the preparation for an extra 5 minutes so the veggies could be tender enough. So 25 altogether.
To make it more flavorful I decided to drizzle with balsamic glaze after serving it, it was a great touch.
