Was absolutely incredible, I doubled the chicken to get more protein and also added a lot more water since my coconut milk was canned. I used the recommended curry paste brand and bloomed it with the aromatics as described. I left a spring of lemongrass in there for flavor and also added some chopped chillis in the mix. I used butternut squash instead of pumpkins. With prep included this took me about 1.5 hours but it should take me 30 minutes less next time now that I know what I'm doing.
