I dry roasted the vegetables and garlic, put the peppers in a covered bowl after to steam and removed the skins of the veggies (eggplant skin can be bitter. I don’t know why the recipe calls for 3 cups of water. Maybe it all evaporates. I didn’t need to add any water; the veggies contain enough. I didn’t add any yogurt. It was great with just the miso. I drizzled a little olive oil on top. Very good with crispy bread sticks
