Great overall recipe. Main points of concern are
1- mirangue peaks - don't make too stiff - should perk up but then droop down
2- cracking happens.. Follow the temp advice to a tee but watch carefully in case need to adjust by opening door more or less - I put it on the higher rack halfway in as well because the top wasn't browning - maybe make sure ban marie is deep enough
