This was the high protein broccoli cheddar soup recipe:
2 tbsp butter
3 carrots
1 stalk Celery
.5 onion
1 head broccoli
3 cups chicken or veggie boulion
Garlic powder (measure with your heart)
Paprika (optional)
(I cooked the veggies then took half and froze them to use in soup in the future)
1.5 cups cottage cheese (blended)
1 cup milk
4-8 ounces sharp cheddar cheese (to preference)
.25 cup flour
Chop veggies
Melt butter in big pot on medium heat
Add onion, carrots, and Celery and let cool for 10 minutes
Add garlic powder
Add broth amd being to a simmer
Add broccoli and let simmer until broccoli is tender
This is the point where I took out 1/3-1/2 of the mixture so far and froze it for later soup. If you don't do this just double the dairy ingredients
Turn heat down to low
Add milk and cottage cheese and mix in well
Sprinkle on flour and mix in
Add cheese and stir until melted and enjoy 😋
