This is a tasty little cake. It has a nice crumb but does break apart a little too easily. I think next time I will add a ½ teaspoon of xanthan gum or Glucomannan (konjak) powder to see if that helps. The cake does have a lovely flavour and is nice with creme fraiche, vanilla ice cream or blueberry compote. It's nice and lemony to serve after fish.
