I've made this a few times. I prefer a can of fire roasted diced tomatoes over crushed tomatoes. I like having other things floating in the soup. I dice a whole onion, Anaheim pepper, and a whole jalapeno. I've made it by shredding a store bought roasted chicken, baking chicken breasts, and cooking frozen chicken breasts in the instant pot. All are good. I just did the instant pot and I liked that the best. I dissolved a chicken bullion cube in a cup of water and added that with another half cup of water. Put the frozen breasts on the trivet and seasoned with 1/4 tsp each smoked paprika, onion powder, garlic powder, pepper, salt and 1/2 tsp cumin. Set manual for 15 minutes with slow release. Ended up with 2 cups very flavorful broth, drained that into a container and shredded the chicken in the instant pot. Used those 2 cups plus 2 cups chicken broth for the soup. I'm improving every time I make it. Family loves the fried tortilla strips. If you have the time and energy, it's worth doubling that part so everyone has plenty of fried tortilla chips.
