Easy to make and quite tasty. I had to make a couple of adjustments based on what I had at home. 1 cup salsa and 1/4 of Rotel's Original (I froze the balance). Adjusted the liquid up a 1/4 cup as I used long grain rice which requires more liquid. Did not have veggie or chicken broth so I used water and a heaping teaspoon of Better Than Bouillon Roasted Chicken. I really liked it, although I wouldn't have minded a little more kick. I did use kidney beans but next time I'll use Small red beans. I think I might like the smaller size better.
