I might make this again but maybe not use the juice from 1 can of beans. Instead, maybe use low sodium bouillon or broth. And it did not need 1 hour to cook…35-40 min tops. My potatoes were thin enough that they were el dente before adding everything together. It just needs more flavor so added a tad bit of salt and some Italian seasoning. Oh, and don’t do what I did. I had some shredded cheddar cheese ready to be used up so I use that instead. And after it was already assembled, I didn’t realize that it was fat free! Therefore it did not melt like it should have.😅
