Very nice recipe! Perfect pudding after a heavy dinner (Sunday roast in our case 😅) - light texture, not-too-sweet, just lovely. Really easy to make too, I followed the directions exactly but subbed raspberry for frozen forest fruits (which i thawed before use to drain some of the liquid). I'd say it needs longer than 2 hours to set - it took about 5 hours to be set enough to put whipped cream and berries on top. It's a very soft texture already so don't add any more liquid or less lemon juice than stated by the recipe, and do make sure to simmer the cream for the times stated.
