Absolutely delicious take on this old English teatime staple.
This makes a relatively light, but tasty sandwich spread, which when paired with the cucumber makes for a refreshing spring/summer meal.
Since I didn't have fresh dill, I did make do with dried but they turned out really good anyway.
Although designed with sandwich breads in mind, it actually works especially well on artisanal sourdough breads; it was excellent on my cheddar jalapeno bread, and I will definitely try it on others.
This makes enough for four adults to have a very fancy sandwich, on homemade bread, with plenty left over. I suspect it would make closer to a dozen sandwiches on standard bread (or 24-48 if you choose to cut them, just depends on size!), enough for any tea party 😉
