We made this for today's lunch, and it was very easy. And it scaled up easily to 24 servings, since I not only have 18 people that live on the homestead full time, but we also had one of our tiny cabins rented out this weekend.
Everyone loved it and it didn't take that long to make it. We did use chicken thighs that I grilled and then we shredded them. In our mindset, thighs give a lot more flavor.
Chicken and dumplings are a real favorite, and we didn't have a drop left. Even our 5 dogs had some, and the Chihuahuas are very picky eaters. Not so for the 3 German Shepherds though.
The fur babies are part of the family so they eat with us as well. I'm just glad that we have my wife's commercial kitchen for her business on our property. It made cooking all this a heck of a lot easier.
