New favourite carrot cake. Very moist and flavourful. Did not add the raisin or walnut due to preferences and allergies.
Had enough leftover batter to make 6 cupcakes/muffins as well. Used the cream cheese icing recipes linked in with the cake. Only needed a half batch to cover the cake generously.
