Made this on stovetop:) I subbed potato for eggplant (loove the combination of eggplant and miso). This came out great! Very flavorful and i do love me my miso. I added some lime juice in the end for acidity to boost the flavours a bit.
I will def make this again! Maybe add some gonger and celery in next time as well? This would probably work very well with salmon or tofu too:) perfectly comforting for a rainy day!
