So I partly followed this recipe, but as only 4 people in my family are yam fans, I ended up making 2 different batches.
I started the day before making the fries. We make our own fries in the air fryer. It is a simple, no fuss recipe: peel, cut, and wash 10 pounds of potatoes. Drain well and pat dry-ish with a lint-free towel. Place in a big bowl. In a separate bowl, mix together salt, garlic powder, and smoked paprika, 1/4 cup of each. Brush oil on the sides and plate of your air fryer and place a handful or 2 of the potatoes. Sprinkle with the spice mix. My fryer has a potato fry setting. If yours doesn't, set it to 400 degrees for 15 minutes. If you deep fry them instead, add spices after draining off the oil.
I also made homemade sausage that I cooked the day before.
The next morning, it was a simple meal to put together. But be warned. It takes an hour or more to cook through. I saved the cheese and sprinkled it on top in the last 10 minutes. No leftovers.
