This was a journey. What started as an eager desire for a healthy lunch with a base of kale from the first harvest of the season from my garden turned into a long slog of making tahini by hand with mortar and pestle, adding too much oil, realizing I only had couscous and not quinoa, and somehow, despite the odds, coming out with something that was very tasty, though hardly worth the trouble it took. Would recommend if you can shortcut some of the steps.
