Absolutely delicious! I found it a tad labour intensive because of the different elements but that's a me problem and overall I was super impressed - especially with the quick pickled onions and the tomato salsa. I didn't have the chipotle pepper for the salsa so I subbed it with smoked paprika and Wow! Amazingly complex flavours considering the scant ingredients. I forgot to add salt and pepper to the chicken marinade because it wasn't included in the written recipe on the Waitrose site but I've added it here. The chicken was still nicely seasoned and incredibly juicy with lovely crispy skin. Hoping the leftovers will hold up too.
