I really enjoyed this! Made it for some friends for dinner alongside baked veggies and chicken wings. It was easy and simple to make. I believe I made it differently to the recipe though. I blended x3 cans of butter beans instead loosened with some water as it was quite thick. I heated up some olive oil first with x3 garlic and x2 parsley from one of those pre-measured freezer cube packages you can get in stores (that was all I had to hand). I let it cook until it all blended into the olive oil for about 2-3 mins and then I poured in the blended butter beans, stirred it to mix together and let it cook for 5-7 mins on low heat and then I took a small sprig of rosemary, cut into tiny pieces and added that in, stirred it and cooked for another 15-20 mins on low-medium heat. I kept checking in on it to stir it throughout. You could even add Chia seeds for the last 5 mins of cooking for a little extra protein. Delicious, simple and comforting food. I'll make it again!
