I used the overnight foccachia recipe. Honestly, I'm a pretty good cook. But I've always struggled with bread.
This foccachia... Was so fluffy. It's the best bread I've ever made, hands down. I will note that I had to proof the 2nd time for 2.5 hours. And after 1.5 hours, I was concerned it wasn't rising. So I put it on top of an oven I turned to 350, just to use the external heat. That did it. After an hour I saw a huge bubble and then followed the rest.
