Awesome soup. Used sharp cheddar and chicken stock. Doubled it for my family of 3. Did need to cook it longer to soften the broccoli. Will steam it first next time. Everyone loved it.

If you shave the broccoli and just get the green florets off, the soup cooks and eats better. I also julienne the carrots and chop them thin so everything cooks quickly 😋
