Yet another wonderful, delicious concept turned utterly revolting by stevia. You're making it with flour and therefore it will be neither keto nor low carb, so go ahead and use real brown sugar in the filling, or go with monkfruit or allulose, or something that doesn't taste like zinc-coated licorice. (I like licorice, so it's more the metallic aftertaste that puts me off.) Maybe some people can ingest stevia without feeling as if they are laying their tongues across the terminals of a 9V battery, but I am not one of them. I keep trying because I'm a slow learner. I discovered, against all expectations, that I could enjoy sucralose without it tasting flat in an acidic liquid, like lemonade or vegetable quick pickles, and think that maybe I'll someday find a recipe with stevia that isn't awful. Nope. It always tastes bad, and at this point, further experimentation will only contribute to food waste.
