This is my own recipe adapted from the Savannah salad at McAllister's Deli.
I had leftover grilled tamarind chicken from chicken tacos the night before, otherwise I buy Soules Kitchen chicken. Their Flamed Grilled Diced Chicken is perfect for this recipe.
I prefer green leaf or butter lettuce, but romaine or a spring mix will work well, too. Season your lettuce with a pinch or two of salt.
I use halved grape tomatoes, but halved cherry, or quarter medium and sliced tomatoes would work, too.
I prefer crumbled gorgonzola. If the store is out gorgonzola, I use crumbled blue cheese.
Red onions are the only onions I use in salad, but a sweet onion or shallots would work fine.
This salad just isn't the same without dried cranberries. Dried cherries wouldn't be bad.
Roasted and salted sunflowers are easy, but toasted sliced or shivered almonds work well, too
You want a light, sweet vinaigrette with this salad, and raspberry vinaigrette is pretty easy to find. Do not use balsamic vinaigrette as it overpowers the ingredients in this salad.
