I didnt have time to bake it on a skewer, so I baked them flat at 425 for 25 minutes, brushing marinade halfway through, and baked slices of pineapple brushed with the marinade on a wire rack alongside it. Perfect for tacos with onion, cilantro, a jalapeño and cilantro creme, and chihuahua cheese though cotija would have been amazing.
