Used this recipe as an instructional base for my own fillings (8oz sharp cheddar shredded from the block, 14oz canned black beans, 4oz canned diced green chilis, 31oz canned refried beans, homemade blend of fried onions & peppers [1 onion, 1 green bell pepper, 1 red bell pepper], and homemade taco seasoning [cumin, smoked paprika, coriander, salt]) but followed the instructions exactly and this came out perfectly cooked.
My one note is that the recipe calls for ten 8" tortillas for a 9x13" pan and I only needed seven! I wonder if the original recipe expects more overlap but 7 tortillas (5 on bottom, 2 on top) kept all the fillings perfectly held with no bursting/spillage. I also cut this into 8 portions so that one portion is a meal as opposed to a snack as the original recipe portions out to very small pieces. Absolutely will make this again with these sizing adjustments in mind though!
