As far as ease, this one is pretty much a breeze. I will say that the "six heirloom tomatoes" is very subjective. I used a combination of purple zebras, sunshine, and one labeled "red heirloom." I'm glad I made a double batch of pie pastry because those FOUR tomatoes made two pies. Be sure you cook the bacon before you even start the tomatoes.
The pies are gorgeous and taste like a margherita pizza to me. With a little creativity, this could easily be a vegetarian recipe, and a little more tweaking could make it vegan.
