Very happy with how this turned out. I used the instant pot for all parts of this recipe including high heat saute function and 8 hour low and slow. Removed the shanks then blitzed the sauce in the thermomix before reducing back in the instant pot on high heat saute. Lovely with smashed potatoes and peas and beans.
