The cookie has a bread texture, not chewy at all, and I even undercooked it to prevent this from happening. I used regular creamy nut butter, and the cookie still had very little sweet taste. It didn't have much flavor at all. I think it offers a nice base for a cookie with add-ins and may play around with it to come up with something I like better.
