Beautiful bright colour and a delicious taste! I used a jar of roasted red peppers in sweet brine instead of the fresh peppers, so skipped the maple syrup and didn't need to add salt. The jars I bought also had whole cloves of garlic in it, so I didn't need to use fresh. Used light coconut milk and vegetable stock instead of chicken. Makes a filling, thick soup with a mild spiciness and sweet flavour. Great for feeding a crowd when multiplied.
