Thought I had shells, did not, turned it into a lasagna.
Delicious.
Used fresh spinach not frozen, sprinkled with salt and cooked down. Squeeze out the moisture.
Added some basil, oregano, and parsley to the cheese/spinach mixture.
Have to make sure you use whole milk mozzarella. Not part skim/low moisture which lacks flavor, melts poorly, and isn't as stretchy gooey. If it was bland this is probably why.
