This was my first real take on Korean food, and I love it so much. My Asia shop didn't have any Pirelli this week (will come next week) so I had to sub for cabbage, still very delicious! Instead of beyond meat I used soy crumble, rehydrated it, pressed I'd out through a cheese cloth and proceeded as normal, also very very good. I made the sauce at home as well and I'll definitely use the recipe for that more often.
I have to say, it was really messy, but that's okay. This feels like a dish you should share with more people, it gives a very social vibe :)
