I salted my potatoes with smoked sea salt when boiling them, then went with Greek yogurt instead of sour cream.I also put a whole 32oz container of chicken broth in.It was the perfect consistency with an immersion blender.I feel like there are unlimited substitutions between the broth, the sour cream, half and half and the different cheeses to make a lighter or slightly different tasting version.I also didnt have bacon so I just fried some bacon bits (the real bacon kind) in a tablespoon or two of butter and just left them in the onion pan the whole time.still tasted super smoky and delicious.
