Sadd Papi inspired me to make this recipe in solidarity with Ukraine during this time of war; there’s a literal war on. WTF. Cooking is my passion and my talent so I figured it’s what I have to give. This recipe was especially important to me because I initially learned how to make borscht while living in a very in a hostile household with several Russians. It was a weird time in my very early 20s. Making this traditional Ukrainian recipe felt like I was correcting something that’s long been wrong inside of me.
