Made about 14 servings worth. Used 4 lb of chicken breast, 2 packages of mushrooms, 8 cups of low sodium chicken broth (2 boxes). 6 cups of orzo. Could have used more mushroom. Parmesean was kept separate for serving. Orzo wasn't mushy at all. Great texture. Only added 8 tbsp of butter. Did add the onion.
Heated up some broccoli for extra veggies.
