I loved it, with some accidental and non accidental changes...
*I made it in my dutch oven, so it was one pot.
*I was missing a few ingredients, tomato paste and basil. I also left out the garlic and chili pepper for dietary reasons.
*Worried it was going to be bland and boring but I dumped some caldo tamate in when I bloomed the spices and onion.
*I also really let that deepen before adding the wine to the pan.
*I also added 2 chopped up portobellos for more substance and flavor.
*I cooked all the veg and wine down before adding the broth.
Turned out amazing! I tried with and without cream, I preferred without. I felt the cream took away from the rich brothy umami.
Update: I wasn't a fan of the tortellini texture in the leftovers, next time I'll just add it to each bowl so it doesn't become soggy later.
