I used apricot jelly instead of cranberry. I like how they turned out.
The instructions don't say to coat the muffin tins. I'm glad i did, made it easier to get them out. Make sure you cut your pastry larger than the openings of your cupcake tins. Some of mine were on the small side and it got messy.
Also, the instructions don't say to remove the rind from the brie. It would make the cheese melt better if you do.
