My family loved this and wanted to know when I'd be making it again! It was truly delicious!
I made this in my Insta-Pot and loved that it didn't take long to cook, but it was the prep that took all my time!
I did add a bit of water/cornstarch mix to thicken up the stew broth. Since I had a 2.5 lb chuck roast, I adjusted the "servings" to match that weight. It told me it would make 15 servings, but realistically it only made about 6 servings.
The first time I make something, I usually follow the recipe exactly. However, the next time I make this, I'll add more potatoes, onions, and use other spices, and not use as much rosemary or thyme, as those two were a bit overpowering for me.
But, I can't wait to make it again!
