I love making Chicken pot pies. Clients love it. I use 2 frozen pie crusts and have tried various brands. I prefer the “Marie Callender” pie crusts. When thaw, these are easier to handle and don’t crumble or crush. This one here is Pillsbury brand. The stuffing is made out of onions, celery, 1/2 chicken breast, minced garlic, one bag of frozen mixed vegetables. Seasonings. Sometimes I add a medium size potato or mushrooms and sometimes I don’t depending on customization. Once cooked, about 2 large tablespoons of all purpose flour and some unsalted chicken stock and then some heavy whipping cream. The stuffing is what o give clients to taste while cooking!
