Lazy version..oil, 500g frozen sliced mushrooms, 200g frozen veg base mix, 600-700ml chicken or veg stock, 1 Bay leaf, 1.5 teaspoons garlic granules, 1tsp thyme or couple of fresh thyme sprigs, generous black pepper. Add all ingredients to medium pan in this order. Bring to boil. Turn down to simmer for 20-30 minutes. Blend in blender. Serves 2 with swirl of double cream or vegan alternative and fresh crusty bread.
