Didn't bother peeling the apples and although I get some peel now and then in the end product it didn't bother me. You still need at least 5-6 hours to cook it all down after pressure cooking it in the Instant Pot, so give yourself a full day. (Which still cuts the whole time in half, in my experience, at least if you're using a slow cooker.)
