Prefer French-style version of this with classic onion/celery/carrot combo. Found this a bit bland, also if looking to use as left-overs - beware the cavalo nero doesn't last well (goes limp & sour-tasting) - better to put just enough in for first serve then reserve enough to put fresh in when re-heating. Biggest challenge to find really good quality sausages.
